Salmon & Fig Salad

The wind has picked up again and this time it has a chill factor that does not allow me to sit outside on my verandah without being frozen still. With my lunch in hand I stride out across the cold grass to reach the tank that is bathing in the sun.  The warmed concrete surface under my behind and my exposed skin starting to tingle with warmth. Satisfied with my effort of putting together a meal that was pleasing on the eye and my stomach.

The local farmers have their signs up for fresh figs for sale on our local roads here on the Sunshine Coast. Tempted by these sweet gems, I had to pull over and get a dozen.  Squeezing a few of them to see which ones were so soft to touch and almost bursting in my hand.  I had to shove one in my mouth before getting back on the road.

A light sprinkle of verjuice combines the saltiness of the salmon with the sweetness of the figs.  Making this salad light and delicate with big flavours thriving to get your attention.  With the sun on my back and mouthfuls of salmon paired with the fig I had a big smile across my face.

Not bad for a Tuesday lunch.  With autumn in the air and the leaves starting to fall from the trees, do you have a favourite sitting spot to get a hit of vitamin D.

Salmon & Fig Salad Recipe

Serves One
  • 100gm Smoked Salmon (I used – Noosa River Smoke House)
  • 2 overly ripe figs, quartered
  • 1 tomato, cut into wedges
  • 3 slices red onion
  • Mixed lettuce leaves (of your own choice)

Dressing:  1 tbsp olive oil & 2 tbsp verjuice (I used – LiraH)

Assemble your salad leaves on to a plate.  Top with the tomato, onion, figs and salmon.  Lastly drizzle over the olive oil and verjuice.

 NOTE:  To get the Salmon you will find it at Maleny IGA, Noosa Market & Kawana Market.  The Verjuice you can find at the Noosa Market, Witta Maket & Montville Market.
