Orange & Polenta Cake – Recipe

Still have a few oranges rolling around in your kitchen? Working through the glut is tiresome, but the bottom of the box is appearing. A rewarding gluten free cake that is moist and one mouthful is not enough. Simple to whip up and eaten as a light dessert.

Ingredients
  • 250gm butter
  • 250gm sugar
  • 4 eggs
  • 150gm yogurt
  • 200gm almond meal
  • 150gm polenta
  • 3 tsp baking powder
  • 2 oranges – zested and juiced

Instructions
  1. Pre-heat oven to 180’c. Line a 20cm round baking tin with baking paper. In a mixing bowl cream the butter and sugar till pale.
  2. Add one egg at a time mixing until combined.
  3. Add the yogurt. Stir.
  4. Add the almond meal, polenta and baking powder, folding until almost combined. Then add the juice and zest from the oranges, stir to combine.
  5. Bake in the oven for 1 hour.

Notes
This cake is gluten free. NOTE: Peel an orange and slice thinly, making sure to remove all seeds. In the bottom of the empty lined tin, sprinkle 2 tbsp of brown sugar, top with orange slices arranged nicely. Then pour cake batter over and bake.
