With the rain not letting up again this week, the need to cook something simple with minimal effort. When the rain sits on top of us, surrounded us with clouds, nothing inspires me to cook up an amazing feast.
This hearty soup is good for combating the flu or warming you up on a cold night listening to the rain on the roof. Serve this up with toast and a glass wine and sit next to your fireplace for a cozy night.
Hearty Beef & Mushroom Soup – Recipe

Ingredients
- 3 tbsp olive oil
- 1 onion sliced, diced
- 3 cloves garlic, crushed
- 2 rashes of bacon, diced
- 500g chuck steak, diced – 2cm squares
- 250 ml red wine
- 1 carrot, diced
- 1 stalk celery, diced
- 1 large tomato, diced
- 2 good sprigs of thyme
- 2 bay leaves
- 4 sprigs of flat leaf parsley
- 2 pepper corns
- 2 cups of water – 500mls (for a richer flavour use beef stock)
- 3 tbsp butter
- 500gm button mushrooms quartered
Instructions
- In a large saucepan, heat olive oil, adding the onion and cooking till golden. Add the garlic and bacon, stirring for one minute. Add the diced beef and continue stirring till the meat has all been sealed.
- Add the wine, and deglaze (scratch any bits of meat that may have been stuck to the bottom) pan.
- Add the carrot, celery, tomato, thyme, bay leaves, parley stalks, peppercorns and water. Ensure that the mixture is all covered with water, adding more if necessary.
- Bring to the boil, reduce to a soft simmer for 2 hours.
- In the meantime, melt the butter in a small frypan, adding the mushrooms, cook until softened and golden. Add the mushrooms at the end before serving, giving a generous mix. Season with salt and pepper
- Serve with toast and butter.
Notes
To make a heartier soup add one cup of barley and one more cup of water when adding the water to the saucepan.

You’re right, another gray day on the Sunshine Coast. We went to the Maleny RSL hall on Saturday night for a concert and we nearly froze to death! This soup would have been very welcome indeed.

That’s a very hearty looking soup and so perfect for this dreary weather. We had a lovely day in Sydney yesterday but it’s now turned and it’s getting colder and darker and wetter. This winter seems to be going on and on and on – probably because we didn’t have any summer. Anyway, I could talk weather all day. But your soup looks delicious and that’s what I need around here right now.
Well I am hoping for a warm and hot summer this year. Otherwise I might have to pack my bags and move further north.
