One of my favourite food bloggers at the moment is Kiran Tarun. Not only do I seem to drool over her photos continuously them inspire me to cook better food. When I saw this recipe I feel in love. Mushrooms are a little weakness I have, usually soaked in butter or lard. Though this recipe also uses cashews to thicken the sauce. A technique that never dawned on me, after soaking them in the past for a variety of raw cakes and sweets. Not savoury – I know you all must be thinking that I have gone mad.
It’s not true, I once was playing a lot with raw foods and coconut products to find that I simply can not live with out butter. It is just too good. When I eat healthier I crave sweet things more like dates, chocolate and gin. It is not a bad thing, though it seems to keep my waste line under control. I think I will stop while I am ahead, trying to convince myself sweets are acceptable. hmm.
I have to say that I did go a little overboard with the cashews in the recipe – so I advice you all to stick to it. I did add broccoli for some extra greenery and topped it off with coriander. The flavour was addictive and I was disappointed when Roy and I finished every last scoop of it, which meant no left overs.
