Chicken Noodle Soup

The way to a man’s heart is his belly.

According to Roy this is the Best Meal I have EVER COOKED.  I’m on a strict pre-wedding diet, its on Sunday.  The menu has not been very exciting for about 3 weeks.  Last night was the night to try out the slow cooker again for ease while at work.  Dinner would be ready when we get home.  It worked.

I’m dedicating this amazing soup to the love birds “Andy and Mandy” who’s wedding is this weekend.

Chicken Noodle Soup Recipe

Stock: 2 carrots, 4 celery stalks, 2 large onions, whole organic chook, salt and pepper

Boil the above ingredients for 2 hours and then simmer for another 4 hours.

Placed in a bowl

  • Vermicelli Noodles – soaked for 5min in boiling water, and drained
  • Asian Greens – your choice 1/2 cup per bowl
  • Chicken

pour over the stock and garnish with bean sprouts, onion, coriander, chili and lemon

Just writing about it is making me hungry, we made enough for dinner tonight too.
