This weekend is Anzac Day however I have already been making Anzac Biscuits now for a few weeks as the weather has cooled down and I just love them with a hot cup of tea. My new favorite variation is Date & Sultana, I have moved on from the original recipe and the Dark Chocolate & Macadamia ones I did last year.

Ingredients
  • 150g butter
  • 1 tbsp golden syrup
  • 1 ½ cup (150g) Oats
  • 1 cup (150g) SR Flour
  • 1 cup (200g) Sugar
  • 1 cup (80g) Desiccated coconut
  • Pinch of salt
  • 1 lge egg
  • ¾ cup chopped dates
  • ¼ cup sultanas
Instructions
  1. Preheat your oven to 180’c
  2. Melt the butter with the golden syrup over a low heat.
  3. In a large mixing bowl place the oats, flour, sugar, coconut and salt. Give a quick mix and then add the melted butter mixture over the top. Stir to combine using a wooden spoon.
  4. Add the egg, dates and sultanas, using your hands to mix together. The mixture will not come together completely. However create small balls of the mixture and place on baking tray allowing room for the mixture to spread.
  5. Bake in the oven for 12 – 15min or until golden. Remove from the oven and place biscuits on a wire rack to cool before serving.
