The Ja Joint: Jerk Chicken Made Easy

Roy and I often go to big festivals and eat at just about every stall, trying all the different foods over the course of the days whilst soaking up the tunes. Earlier this year as per usual we went to Blues Fest in Byron and noticed a new stall – The Ja Joint. To be perfectly honest I am not one to eat spicy chicken at the best of times but Roy he will go to town on the stuff. I watched an episode of Jamie Oliver which seems like a life time ago where he made jerk chicken and it just sounded so exotic – mind you I would hold some of the chili. Up until last week I have finally tried jerk chicken and it was super simple to make and tasty.

Carly from the Ja Joint is English/Jamaican and learnt to cook the traditional foods of her homeland by her grandparents and aunties with some of them still living in St Ann in Jamaica today. Understanding the process of cooking traditional Jamaican food to most what may seem time consuming and confusing Carly started to experiment. After doing the rounds of festivals, reggae shows and catering around Brisbane Carly has fine tuned her recipes and has developed the  best Jamaican Jerk marinade possible.  The marinade and sauces are now selling her through The Ja Joint website available to all of Australia.

We received the Jamaican Feast Kit which came along with a cooking bible on how to make an authentic Jamaican meal. We followed it precisely as we had never cooked this style of cuisine before. The recipes included are easy to follow and foolproof. We ate a stunning meal and it took less than 90 minutes. We are first timers after all.

Sprinkling the Jerk Spice mix on our chicken and after rubbing it in we fried it to golden brown and then put it in the oven to finish it off. How easy is that.
