Can you feel spring in the air? Me too, I am sure the weather will start warming up soon. Well I am not going to sit around and wait for the perfect reason to eat salad. It is officially spring and that means fresh food becomes more abundant and flavours rich, plus plenty of colour.
I like salads as a meal on it’s own not as an added extra to your plate. So they need to be hearty and fill the gap like the salmon, eggplant and lentil salad. When the time does come to take a plate to a BBQ or dinner I like to wow them with colour or by a flavour statement like the strawberry salad which has a vanilla dressing.
