Avocado Toast | 4 Ways

We have moved from one avocado growing area to another. Here in the Byron Bay Hinterland there are so many avocado farms and people selling organic avocados. Avocado prices here are a little strange but I have finally found a few good places to get them for a $1 each instead of $3 each. Who would have thought that even in an avocado area you can still charge a premium for avocado’s.

One of the great things about avocado’s is there are several varieties and they all have a different growing season. Which means in the sub-tropics we are blessed with avo’s for most of the year.

Avocado toast is one of my all time favourites for breakfast from when I was a kid. Since then I have explored the possibilities of what you can add to avocado toast. For a very long time I was a plain avocado and salt kinda girl.

When I started working in cafes that did breakfast I soon discovered avocado & Vegemite on toast. At first I thought it was a crazy idea but we use to eat Vegemite scrambled eggs when I was young. Yes – weird, but yum.  I was an instant convert from that day on that avo and Vegemite was a great combo.Avocado Toast | 4 Ways Avocado Toast | 4 Ways

When Roy and I started sharing breakfasts for the first time, the avocado on toast topic came up, I was confused by his choice. Wasabi & soy sauce. Yes – weird, right. Wrong! It is a great flavour combo. Roy’s technique is to spread your toast with a little butter followed by a lightly spreading a little wasabi. Mash the avocado on top and then using a knife create lines or divots so when you add the soy sauce it stays on top. Avocado Toast | 4 Ways

Another classic breakfast is avocado with bacon on toast. This is a miracle cure for hangovers I swear. The salty oily creation will perk you up along side a good strong cup of tea or coffee. I can vouch for it. I worked in hospitality for years, drinking with the best of them, only to find myself feeling a little sorry for myself the next day only having to face another day at work.   2. Oh my gosh. Firstly, your photos are gorgeous and I feel like I could touch the avocado, vegemite and toast (oh.. I LOVE vegemite on toast… adding avocado… yes please!!)… but adding bacon?! Marvellous! I never thought of this.,.. but so trying it 🙂

  3. Totally with you on this – avo on toast is the BEST! I’ve had all of these ways except for the wasabi and soy – must try that one!!! Have you ever had it with smashed avo, lemon, feta and mint? Amazing!!!!

  4. How lovely to be able to get avocados so easily, really struggle here in rural France. Your toast combos sound delicious, except for the Vegemite, which I think is similar to Marmite? & I’m not a fan. I’ve got some horseradish growing so might try it instead of wasabi ( can’t get that in rural France either ) Thanks for sharing 🙂
