Finally real corn tortillas that remind me of Mexico. It was seven years ago Roy took me backpacking through Mexico and I have to admit I was not the most adventurous eater while I was there.

If you ask Roy what I ate during our time traveling through the northern part of Mexico he will answer ‘taco’s for breakfast, taco’s for lunch and taco’s for dinner’. Honestly I loved them. I tried them once and it was a huge moment for me, I like coriander, chili sauce (the mild stuff) and I love meat. A whole taste sensation that blew my mind. Today I still make taco’s to the best of my ability to replicate what we ate on our travels.

Our good friends Jefte and Joey have started up a business making the real thing – fresh corn tortillas using organic, non-gmo masa flour. These guys are true foodies and let me tell you Jefte sure makes the tastiest Mexican I have ever eaten.

Jefte and Joey left the city to pursue the dream of living the simple life and raising their family among the hills in the Northern Rivers. A part of that dream was to make the tortillas Jefte grew up eating. And so began their journey, they brought a tortilla oven from México and have set up shop in Burringbar, NSW.

Doña Cholita is what they have called their tortilleria (a tortilla bakery). Doña Cholita is Jefte’s beloved grandmother. Doña is a respectful term for an older woman, the feminine version of Don. Cholita is her nickname, her Christian name is Soledad. Jefte and Joey said on choosing a name ‘When it came to naming our business we wanted something that told a story, something that encapsulated our passion for food, something that had an authenticity to it that showed our connection to México and to our families. Something that we could be proud of. Doña Cholita is the Juarez family Matriarch, a beautiful, strong woman who really was an amazing cook, it felt like the perfect fit.’

  1. Oh Yuuuum, I hope they’re on their way to Tassie soon too! Otherwise we might just have to move back to the Northern Rivers. Such a beautiful area!
