The colour of pineapples reminds me of summer. Hot, tropical sunny days, this punch is perfect as an afternoon drink for the whole family. Or add a nip or two of vodka into the mix and you have a festive cocktail to party the night away.
Festive Pineapple Punch

Ingredients
- 1 medium sized pineapple
- 2 cups of ginger ale
- Small handful of mint, finely sliced
Instructions
- Top and tail the pineapple and remove all the skin. Set aside one slice of pineapple to use as garnish in the punch. Cut the remaining pineapple into 2cm chunks and place in a blender. Keep the core of the pineapple out. Blend the pineapple into a smooth paste. Pour into a large jug.
- Chop the slice of pineapple into small 1cm square and add to the pineapple puree. Add the ginger ale and mint and give a good stir. Fill the jug with ice and garnish with mint leaves.
Notes
Add 1-2nips of Vodka for an adults only cocktail.

Your photos of the punch are fantastic, so colourful! I love pineapple season, it is my favourite fruit. I am definitely going to try this punch…would be a nice one to bring out for Christmas lunch.

Well you can have alcohol of your choice in it if you wish.
Terrific punch! I love the flavor of pineapple. And I never seem to drink ginger ale, and it has such a lovely flavor. It must taste wonderful combined with the pineapple. Good stuff – thanks.
