Drinking smoothies are cool, did you know that? I went to a local market the other week and now there are stalls that just do smoothies. Sometimes living in the hills I become very detached to what is happening out there in the world even on my doorstep.
Firstly I need to admit that the only thing in our garden that has survived the wet weather in January and the heat that came along with it was the kale. Honestly I have never killed a kale plant yet. With little veggies coming in from the garden I am finding my ‘kale appreciation’. Finding all those recipes that were hip two to three years ago. Yes I am going to make kale chips, damn it.
Every now and again I make a smoothie, I treat it like a cleanse and I tend to have them on a Monday. Like many of us eating healthy and exercising always starts on a Monday, slowly fading back to bad habits by Friday. Usually by the end of the week I have scouted out all carb related meals and had them consecutively instead of spacing them out. Plus I always go back for seconds if it is totally delicious and what can I say – I am an excellent cook.
We eat pretty healthy in this house the only thing that gets me is quantity. Tell me do you start your health kicks on a Monday too?
- 1 cup unsweetened almond milk
- 4 sprigs kale, chopped
- ¼ cup fresh pineapple, diced (about one slice)
- 10 blueberries, fresh or frozen
- 70g extra light ricotta cheese
- 1 tsp peanut butter
- Blend ingredients until smooth. Pour into a glass and serve.
